frugal foodie


it's a ruse. with all the food porn i take and the seemingly fancy schmancy stuff... i hope readers remember that... i'm really good at 5 ingredient meals and cheap eats. jack and i don't eat out as much as my blog or food porn album might make it seem. we have to save money - we're hoping to purchase a home next year, after all.

and when we eat at home, i make one meal dishes or casseroles with the hope that they'll be reincarnated to different dishes for, at least, two/three days.

i'm learning about freezer storage. i make my own chicken stock, spaghetti sauce, etc... and i freeze them. from the chicken stock, there's poached chicken i can later use for whatever fits our fancy.

last night, jack stayed the night at port townsend for work. i didn't want to cook something huge so i made myself a pasta dish - with what i had in the pantry & fridge. whole-wheat egg noodles (1 1/2 cups). then in a sautee pan, i put olive oil, then put in garlic, roasted tomatoes, frozen peas, and that calabrese salami that i had for my antipasto lunch. i topped with parmesan cheese, pepper and salt. oh yeah... i tossed the cooked pasta into the sautee pan.

i would have added spinach to the sautee but only remembered when i was half-way finished with eating my dish.

but yes, cheap eats is actually kind of an adventure... especially trying to do it healthy.
