Today I didn't want to go to the supermarket and ended up defrosting chicken. Got the tikka masala spice out and marinaded the chicken bits and put in skewers. I have a grill pan at home...and I grilled inside. Whoa I smoked the house up! heh. Then I made couscous with broccoli. Oh and I made Tzatziki Sauce to go with it. Jack ate it up. I ate like two skewers worth and Jack ate the rest. He finished the whole platter!
Bistek Tagalog with chicken

One evening I made simple Bistek Tagalog with chicken. I cut up chicken pieces (from boneless chicken breasts) and marinaded with soy sauce, lemon juice, and a lot of pepper. 30 min to 1 hour should be good. Jack and I like a lot of onions. I cut up onion rings from two medium sized yellow onions.
In a pan, I sautee the onions until translucent then I remove and put aside. Then I take out the marinaded chicken. I put it in a deeper skillet (save the marinade for later). On low to medium heat, I let the liquid evaporate and the chicken eventually starts frying up. When it's browned and fried, I remove and put on a platter, then get the cooked onions and put on top of the chicken. In the same pan you fried the chicken, pour the marinade in and scrape up all the good parts at the bottom. If you want more liquid-y, add a little more water, and season with more pepper to your liking. Simmer on low for 6-8 minutes. When finished, pour over the chicken & onions. Serve with rice. :) I like to garnish with chopped tomatoes & green onions. A little salsa if you will. heh.
