Jack and I ended up in Seattle after several attempts to meet up with family in Reno & Vegas. Thanks Snowmaggedon Seattle 2008.
We were cooped up in the house for over a week because of ice & snow - a once every 20-40 year event in Seattle. Thank heavens for an all-wheel Subaru and a husband who is skilled in driving in ice & snow - because he did grocery runs a couple of times so we can have food in the house. I believe we were one of very few vehicles that was able to make it out of our apt complex and hill.
Long story short - we ended up in Seattle so we wanted, at least, a pretty good Christmas dinner. So I attempted to make a holiday dinner for two. This is the result:
* a bone-in/skin on 4.5 turkey breast that I roasted
* side-dishes of vegetable couscous and brussel sprouts with bacon & onions
Holiday dinner in two hours...and a healthy one at that. :)
