We had a sunny moment yesterday evening and Jack came home early enough from work that it was still light outside.
So our dinner was put into containers pronto and off we went to Lincoln Park. We ended up at the park's shelter because as soon as we arrived (5 minutes from home) the sun disappeared and it started to get chilly.
I prepared a smoked salmon salad: I sauteed garlic, onions, tomatoes, and spinach and added orzo to the mix, then i added everything to the organic salad bag that contained a mix of greens (including red & green romaine lettuces, red & green oak leaf, lollo rosa, tango, organic red & green chard, organic mizuna, organic arugula, organic frisée, organic radicchio).
I topped off with feta cheese and capers and drizzled red wine & olive oil vinaigrette.
I also bought a loaf of kalamata olive bread so we can dip in the white truffle oil that we bought from Pike's Market a while back.
***yes, i admit we are very into mediterranean flavors in this household. jack loves greek, italian, ...anything mediterranean. he keeps trying to persuade me to learn how to make gyro meat. yeah right.
Then we had a fruit salad that's always in our fridge. I'm a fruit fiend. I love fruit the way Jack loves chocolate.
* a note on that smoked salmon salad: the garlic encrusted smoked salmon was bought by our cousins, jenny & aaron, from pike's famous fish market to take home with them to vegas. alas, they forgot when packing as it was in the fridge. so jack and i are very thankful because we're getting a lot of good use with this gourmet salmon!
