Saturday's No-We're-Not-Turning-Vegetarian- Veggie Breakfast
Quickie Quiche

This week we ate out a lot or as we say in this house, Jack "cooked" dinner. But there were a couple of times when I felt like cooking. Unfortunately I had a migraine for most of the week and just didn't feel good to hover over a hot stove. Thankfully Jack was okay to "cook."

Last Thursday,I made a quickie quiche for dinner. My quiche was made up of sauteed Italian sausage, artichoke hearts, portobello mushrooms, spinach, and feta cheese. Jack loved it... he had half the pie and took the rest for his breakfast and lunch the next day.
This morning for breakfast I decided to go all out on the veggies. I sauteed onions, broccoli, the rest of the portobello mushrooms, bell pepper, tomatoes with 2 scrambled eggs and feta cheese to just hold together the veggies a bit. Then I just fried Morning Star's veggie breakfast sausages.
