sinigang

Pinoy cooking continues tonight. I made the torta filling of potatoes & lean groung beef last night and just made egg patties tonight. They are addictive and yes, look like pancakes. I look forward to when I can have easy access to Japanese eggplant and make "talong (eggplant) torta." If you're lucky here, Fox Farms in Joplin carry them.

Then I thought that having just torta & rice - was too dry a meal. I needed some "sabaw" or a brothy kind of dish to pour over the rice. I could have eaten just the torta & rice but Jack likes to have his rice soppy. So I decided to make hipon na sinigang. or tamarind shrimp soup. thai cuisine has lemongrass - filipino cuisine has tamarind.

so i asked jack to see if he can stop by the groceries so i can fill the sinigang with yummy veggies like bok choy, daikon radish - which i've seen before in stores here... but no luck this time. jack went to IGA, to Dillons, and a last resort, Wal-Mart. He was a little pissed, to say the least. He said he couldn't wait to be in a place where everything was in one market. I just can't wait to be in a city where there are places where I can buy different produces like long beans, bok choy, chinese spinach, japanese eggplants, bitter melons, chinese celeries, bottle gourds, etc.. .
but i digress --- still the shrimp sinigang that's improvised with spinach and jalapenos was okay enough to pour over our rice to make it soppy.

pictures of tamarind from a tree (yes, a little phallic)

and tamarind candy (sampaloc) - i remember these as a child. quite the acquired taste. simply sour & sweet.
