I haven't blogged about food in awhile. Been lazy more than anything.
I've been cooking but haven't felt the urge to take food porn.
Tonight I was feeling inspired. I made tikka chicken which was sooooo spicy, our mouths were burning. I have plenty left and I'm thinking of taking the chicken and making enchiladas tomorrow. Should be good.
Otherwise, I made a mediterranean salad with a mediterranean salad bag from the store and I added grape tomatoes, green onions, crumbled feta cheese, pine nuts, green olives, and couscous that was cooked with more green olives, spinach, tomatoes. Dressing was the red wine & olive oil vinegrette.
For dessert I made Jack Triple Chocolate Cherry Bars. Very easy. Here's the recipe:
Ingredients:
*1 box Betty Crocker SuperMoist chocolate fudge cake
*1 can (21 oz) cerry pie filling
*2 eggs, beaten
*1/2 (12 oz size) of semisweet chocol chips (@ 1 cup)
*1 container Betty Crocker Whipped choco frosting
1) Heat oven to 350F. Grease & flour or spray with baking spray wtih flour in a baking pan
2) In large bowl, gently mix dry cake mix, pie filling, eggs & choco chips with scraper, break up and undissolved cake mix by pressing with scraper. Carefully sprad in pan
3) Bake for 35 minutes (or until toothpick comes out smoothly...maybe some melted choco chips on there).
***Cool completely (@ an hour). Frost with frosting
Jack gave it his seal of approval and said to serve with ice cold milk.
