I felt like cooking and baking this weekend. So I did.
Last night, I made a turkey bacon, lettuce, avocado, tomato sandwich on cheese bread. I also made a cheese broccoli soup that has been in the crockpot for most of the afternoon. Unfortunately I didn't take any photos. But it was good comfort food since we're having a winter in spring in Kansas right now.
This morning, I made a cheese pancake. The pancake mix I use is the quite healthy (or sounds healthy) Hodgson Mill's Multi Grain Buttermilk Pancake w/ Milled Flax Seed & Soy. Yesterday, I made it with chocolate chips as I was feeding Ailie and RJ (8 & 6 year old neighbors' kids) who spent the night Friday. Today, I made the pancake mix with cheese. Plus I made an omelet with leftover Easter Ham and scallions. Simple. Simple.
