I haven't posted in such a long time. 3 months? Time flies when your cup runneth over.
Jack is in Vegas right now and will be there until the 27th. It's rock climbing season there and me? Single mingle time...well not really. Work galore as always.
So in trying to have breakfast, a healthy breakfast at that, - I decided to make these breakfast cups --- 140 calories each.
Make them ahead, refrigerate, and warm them in the microwave in the morning.
RECIPE:
* 4 oz turkey sausage
* 1/2 green bell pepper, chopped
* 1/4 onion, chopped
* 5 large eggs
* 1 can (12 oz) sliced mushrooms, drained
* 1/2 cup (2 oz) shredded reduced-fat cheddar cheese
DIRECTIONS:
1) Preheat oven to 350. Coat 6 cup nonstick muffin pan with cooking spray or line with paper baking cups
2) In a medium non-stick skillet over medium-high heat, cook the sausage, pepper, and onion for 5 minutes, or until the sausage is no longer pink
3) Spoon the mixture into a bowl and cool slightly.
4) Stir in the eggs and mushrooms
5) Even divide the mixture among the prepared muffin cups. Sprinkle with cheese
6) Bake for 20 min, or until the egg is set
