jack went to north carolina this weekend (until tuesday) for work... but he is, as i write this, watching the live races at nascar. i saw that it was even televised. i wish my work would send me to those types of "co-worker bonding" type field trips. not that i'm bitter.

and i'm not. hee. i got a lot of work done today and needed some alone down time but i miss, as brie calls him, blackjack-the choco bandit. he's pure sweetness & sunshine.

i slept a lot today, too. it was much needed. but i'll be cooking up a storm tomorrow to prepare for the onslaught of the week so we can have some grub and i can just reheat when we come home from work.

tonight i made fiilipino giniling. holly's fault. she kept talking about it and so i had a craving. the recipe calls for the filipino holy trinity (sauteed garlic, onions, tomatoes), ground beef (get the leanest), potatoes, bell peppers, carrots, peas, bay leaves, and lots of ground pepper and soy sauce. serve that with rice - best with brown jasmine rice and it's oh so good. the recipe is fool proof, too, that even i i can't mess it up. i made extra for the week and it's such a versatile recipe. if i buy the frozen pillsbury pie dough at the store, i can put this as a filling and bake it, ala empanada style. you can add raisins if you like raisins. i told holly about this and she freaked. the girl is hostile towards raisins.
you can even make a giniling torta/filipino omelette. for breakfast, scramble some eggs and put a teaspoon of this in the scrambled egg and fry. you can add cheese if you like but i'm not a cheese lover so i do without.

the possibilities are endless.

now i just have to clean up the mess i made in the kitchen. ugh.
