recent meals - at home & out & about

AT HOME


chicken ginger stew with green papaya

i made this for our dinner some weeks back. this is somewhat of a staple in filipino kitchens. i know i grew up with it. i had to do some substitutions though for one ingredient. usually the recipe calls for chili pepper leaves and not one place sold them (i might have to grow my own) - so i substituted spinach leaves instead. serve hot over rice.

i know it doesn't exactly look pretty or healthy. but this chili cooked in the crockpot has the leanest meat and beef used quite sparingly... mostly it has red kidney beans, pinto beans, and your tomato stuff. i actually cooked it in the crockpot so i can have a healthy lunch for the week of a small bowl of chili and a side of salad. it was my dinner,too, for a few nights. for jack, however, i made it into spaghetti red where diced onions & lowfat shredded cheddar was put over whole-wheat spaghetti. at least, it's a lot healthier than your regular spaghetti reds that are out there. hee. as for me, what i learned in the midwest is to drizzle vinegar over my chili...and now i can't eat it any other way.

Ceviche

one of my favorite dishes ever. raw seafood (this one is raw fish) cooked by acids from limes and then seasoned with other yummies. i can eat this any 'ol day. it's like the latin sushi. hee. jack and i will just go to cactus at alki --order this and glasses of mojitos and we're set. :) --- of course, the ones we've had in mexico and southern california are pretty good but we'll take ceviche whereever we can get.

this one is non-alcoholic for me... it was the night of avenue q and since i'm a lightweight --- i don't think i would have lasted or retained watching a two hour musical. so i ordered the virgin drink ...jack had a coconut mojito with the works. he's not a lightweight. ha!

after jack and i did our volunteer work and then did the rice walk last saturday - we were starving. all that talk about rice made us hungry for it. is that wrong? we ended up going to the sushi place near our home and just had a light lunch. jack had sushi & teriyaki. he shared a couple with me. i like his shirt.

Oriental Spoon - Asian Bistro in Bellevue for some Japanese, Chinese, and Korean goodness

Pho Than Brothers - for quicker, faster, and healthier and cheaper fast food of Vietnamese pho. Total for Jack & my dinner was $13...that's including the tip. Try & beat that.

Oh and let's not forget that I had a craving for a Polish dog with sauerkraut from Costco.

Please don't think we ate this all in one week's time... this is about a month's worth or more... of eating & food porn.

Stay tuned for more... Jack & I are off to Bandon, OR this week driving the Oregon coast and then one of my best buds, Shaka is coming out here for an optometry convention and we're doing dim sum, dilettante, and maybe crepes at Pike's. I'm going to hang out at her hotel on Saturday night - she's staying near the Pike's market. I'm so excited to see her.


BTW --- i'm growing my own basil, rosemary, thyme, and oregano. i've used basil quite a few times and used thyme on my meats, poultry, and last night made mahi mahi marinade with it. :) i don't have a green thumb and so this is pretty big for me. :)
