jack requested meatloaf dinner and spaghetti with meatballs for this week. i'm so glad because i didn't feel like eating pinoy food this week. now i'm out of my comfort zone with the meatloaf dinner since i wasn't raised on this stuff- but jack wanted meatloaf (minus the ketchup), mashed potatoes, gravy, green beans.
i made everything from scratch (except for the green beans - that's provided by nature) and even made up or combined different recipes.
my meatloaf is pretty healthy. i put veggies inside it and topped with tomato sauce. another option instead of ketchup was cream of mushroom soup but i don't like cream based sauces too much. neither does my tummy. i made garlic mashed potatoes with chicken broth instead of cream. so all in all pretty healthy & pretty good.
we had that on monday night (last night) and the meatloaf was going to be reincarnated as shepherd's pie tonight but we decided to go on a picnic instead. so i made pasta, shrimp, salad, and fruit salad. and off we went to lincoln park nearby. it was such a beautiful day, sun was out that we couldn't stay home for din.
tomorrow we'll have the shepherd's pie and then spaghetti & meatballs but who knows... we might eat out since it's first thursdays this week - we might hit the seattle art museum (free admissions to seattle museums until 9pm) or the gallery walk in pioneer square. and on friday, we're going to the seattle shakespare company to watch "the miser" - by french comedy writer, moliere - not shakespeare. we heard good things about it.
