pancetta fried rice
(long grain rice is a lot better to fry than short grain rice cuz short grain rice is a lot stickier)





*pancetta, cubed (you can buy them cubed already) - fry, remove from pan, and drain on paper towel - set aside
*scramble eggs, remove from pan and set aside

other ingredients:

*2-3 cups day (or two) old cold rice ( i use brown jasmine rice but it's preference)
* two scallions, julienned
*half of a large onion, chopped
*garlic, chopped/minced (i use 4-5 cloves but 2 large cloves will probably be good - again preference)
*1/2 cup of frozen peas & carrots (thawed)
*2-3 tsp of canola oil

***you can add any veggies you want and any oil you prefer or any meats... that's the genius of fried rice

directions:

1) in a wok, med-high heat, sautee the garlic & onions until onions are transparent
2) add the rice and fry, constantly stirring (if it starts to stick in your pan, add a little more oil)
3) then add all the veggies, pancetta, and scrambled eggs
4) if you want and this is optional... add 1/3 cup (or less is probably better...um watch your sodium intake) of soy sauce - i usually don't add soy to mine because of the sodium. besides we put sriracha hot sauce over it anyway.

wala...fried rice.

BREAKFAST OF CHAMPIONS


this has been my favorite breakfast of late - i would say the last month or so.

kashi oatmeal - maple
with 2/3 cups of soy milk
microwave for 3 minutes
add another 2 tbs of soy after
slice bananas & stir

yummy with a nice cup of hot tea
