Upo Guisado
For dinner last night, I made upo guisado with upo (a bottle gourd) that I bought from the Asian market.







Recipe goes as follows:

Ingredients -

* Bottle gourd (in Asian markets) - I used both of the upos pictured above
* 2 cloves of garlic minced and diced
* 1/2 - 1 onion - quartered
* 1 tomato, diced
* 1/2 lb ground pork
* a handful of cooked, frozen mini-shrimp
* season with fish sauce or salt and lots of freshly ground pepper

Directions:

1) Sautee garlic in oil until browned
2) Add onions until translucent
3) Add tomato until all are mixed and pulpish
4) Add ground pork and mix
5) Start seasoning with lots of ground pepper
6) Add the upo, cover pan, and stir occasionally
7) Cook for about 10 minutes until upo is tender
8) Do not add water because the upo when seasoned brings out liquid- however if you want more sauce, feel free to add 1/2-1 cup water
9) Season with more fresh ground pepper and fish sauce
10) Add shrimp and bring to a quick boil

Remove from heat and plate.




Serve with brown jasmine rice










PS side-dish: eggplant


Cut length-wishe and then in half, leaving skin on

Fry in canola oil until soft and tender

Dip in soy sauce (low sodium), vinegar, and crushed garlic.
