Okay so last year while still in Kansas, my husband went into some kind of baking frenzy and bought three bags of butterscotch chips, white & chocolate chips, peanut butter chips, and mint chips. He thought he would be baking a lot and when we moved, these bags of choco chips, etc... moved with us.
So what's a girl to do with three bags of butterscotch chips? Why make butterscotch banana bread of course. Now I have two more bags left. (The chocolate chips & pb chips went fast).
Here is the recipe stolen from recipezaar - it turned out pretty well I think. I'll have cake with my afternoon tea tomorrow. Jack will have it with ice cream probably.
RECIPE:
1 loaf

20 min prep
INGREDIENTS:
2 ripe bananas
1 3/4 cups flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2-1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon salt
3/4 cup sugar
2 large eggs
1/4 cup butter, melted
1/4 cup milk
1 cup nuts, chopped (optional)
6 ounces butterscotch chips
DIRECTIONS:
1. Mash the ripe bananas; set aside.
2. Sift together the flour, baking powder, baking soda, cinnamon, nutmeg and salt; set aside.
3. Combine mashed bananas, sugar, eggs and melted butter. Blend well.
4. Alternately blend flour mixture and milk. Stir in nuts (if using) and butterscotch chips, but leaving a little behind to sprinkle on top.
5. Pour into greashed 9-1/2-inch loaf pan.
6. Sprinkle top with reserved nuts and chips.
7. Bake at 350° for 60 minutes (or shorter time for smaller loaves).
8. Cool.
