I've been wanting to do this forever. I made a thai stir fry and I just kept dumping a bunch of veggies in it. Broccoli, spinach, carrots, onions, garlic, ginger, bell peppers...then added tofu and chicken.
Then my low fat thai peanut sauce from scratch. Then I put some Pinoy touch to it. And like with all Filipino cooking, I always say the key is FISH SAUCE. I tried to kick out Jack when I drizzled fish sauce in the hot wok because the aroma becomes pungent at this point. He used to run out of the house...now he says "it doesn't bother me anymore. i like it." In fact, he'll get kind of hostile if I use salt instead of fish sauce. He won't stand for it. hee. My hubby is turning Pinoy.
I served it with brown basmati rice. My favorite is brown jasmine rice but I always have to order mine online and with the basmati, it's super good too but I can buy it at the organic section at the local supermarket.
